We use this Shahi Punjabi Garam Masala in every dish that calls for garam masala. It has exceptional flavor and balance, and is superior to all other garam masalas that we have tried.
Garam masala is a finishing spice—meaning it's added at the very end of cooking, just before serving. Why? Because garam masala's magic lies in its aromatic oils, which are delicate and volatile. High heat or prolonged cooking drives off these precious aromatics. A light sprinkle in the final moments allows the spices to bloom gently in the residual heat, releasing their full fragrance and warmth into the dish.
